    Chicken: Chinese Chicken in Lettuce Roll

    List of Ingredients




    1 pound boneless skinless chicken breast halves
    2 cloves garlic, crushed
    1 teaspoon peeled minced gingerroot
    1 green bell pepper, julienned
    4 scallions, julienned
    2 tablespoons vinegar
    1 teaspoon sesame oil (off plan ingredient)
    1 head green lettuce

    Recipe



    In a large frying pan over medium heat, combine the chicken, garlic and ginger. add cold water to cover. Bring to a simmer, cover, and cook untilt he chicken is tender, about 10-15 minutes. Drain the chicken and place int he refrigerator to chill. Shred the chicken and place in a large bowl. Add the peppers and scallions.
    In a small bowl, whisk together the vinegar and oil; pour over the chicken and toss well to combine. To serve, portion out your correct amount of chicken. Place a little chicke on each lettuce leaf, roll and eat.
