    Chicken: Grilled Chili-Rubbed Chicken

    6 boneless skinless chicken breast halves
    3 Tbsp. tomato paste
    2 Tbsp. chili powder
    3 Tbsp. water
    1 Tbsp. seasoned rice vinegar
    2 cloves garlic, minced
    2 vine ripened tomatoes
    6 fresh rosemary sprigs
    6 wooden skewers

    Recipe



    Mash garlic in a small bowl. Stir in tomato paste, chili powder, water, and seasoned rice vinegar.

    Rub mixture over each side of chicken breast and place in a shallow baking pan to marinate. Cover and chill over night.

    Heat grill according to manufacturers directions. Meanwhile, core and slice tomatoes into 3 thick slices each. Place chicken breasts on an oiled rack over grill and cook for 8 minutes on one side. Turn chicken over and place a slice of tomato on each breast. Continue to cook until chicken is done.

    I would also, cut up 2 yellow squash, 2 zuchinni, a small onion and some fresh mushrooms. Put them on a large sheet of aluminum foil or in one of those foil bags...shake with some Mrs Dash, garlic powder and pepper and cook the packet on the grill for apx 30 min or until veggies are tender.

    Serve with tossed salad
