    Chicken: Hawaiian Chicken

    List of Ingredients

    * 6 large chicken breasts
    * 4 large red bell peppers
    * 2 large sweet Maui onions
    * 16 oz can pineapple chucks in unsweetened juice

    Recipe

    Cut the chicken in bite-sized pieces. Put all ingredients in crockpot and cook all day long. Good served over brown rice.

    Notes from poster: I took out the chicken and measured out my 2 ozs...then I took 1/2 cup of the pinapple for my fruit...and added some juice! The meals I couldn't have fruit, I measured out 2 ozs of chicken with some onion & peppers and put it over my 1/2 cup of rice with juice!
