    Chicken: Heated Grilled Chicken & Potato Salad

    grilled chicken breast
    baked potato, peeled and sliced
    red wine
    favorite spices
    onions, sliced or diced
    bell pepper, chopped
    salad greens
    cherry tomatoes

    Recipe

    Cut grilled chicken into bite-size pieces. Toss potato slices in red wine then season with your favorite spices. Roast potato slices, onions, and bell peppers in oven, toaster oven, or on grill until done. Mix chicken, potato/vegetable mixture in a bowl and microwave on high for 1 to 1-1/2 minutes to heat through. Serve over green salad with cherry tomatoes.
