    Chicken: Parsley Spinach Chicken Stew

    List of Ingredients




    1 cup chopped fresh parsley
    8 ounces spinach, rinsed and chopped
    1 onion, chopped
    2 cups potato, cubed
    8 oz skinless, boneless chicken breast (start with about 10-12 oz raw)
    1/4 teaspoon ground turmeric
    2 tablespoons tomato paste
    1 cup water
    3 tablespoons fresh lemon juice

    Recipe



    1 In a medium size frying pan add the parsley and spinach and steam

    2 In a large pot add the onion and saute, stirring occasionally, until tender. Add the chicken breasts and brown both sides of each breast. Add the salt, turmeric, wilted parsley/spinach, water and tomato paste. Bring all to a boil and let boil for 10 minutes.

    3 Add the cubed potatoes. Cover and let cook over low heat for 1 to 2 hours. Add the lemon juice, bring to a boil and let boil for 10 more minutes.

    makes 4 servings – ½ cup carb. 2oz protein, free vegetables
