    Chicken: Paillard of Chicken

    List of Ingredients

    4 large boneless skinless chicken breasts, trimmed of fat,washed,patted dry
    salt
    fresh ground black pepper
    paprika
    4 cloves garlic, finely minced
    2 tablespoons olive oil
    2 lemons, juice of
    1/4 cup snipped fresh chives

    Recipe

    1. Prepare grill or heat broiler on high.
    2. Place one large sheet of plastic wrap on flat countertop.
    3. Take a few drops of cold water and moisten surface of chicken.
    4. Season chicken breast generously with salt, pepper and paprika.
    5. Place one chicken breast in center of plastic wrap; cover with a second piece of wrap.
    6. Flatten meat with flat meat mallet, pounding chicken breast from center outward to an even 1/4-inch thickness.
    7. Repeat with remaining chicken breasts.
    8. Combine garlic and olive oil in a small bowl.
    9. Remove chicken from plastic.
    10. Rub surface of chicken with garlic oil mixture.
    11. Combine lemon juice and chives in a separate small bowl; season mixture with salt and pepper, set aside.
    12. Place chicken on grill or in broiler; cook until well seared, about 3 minutes.
    13. Turn and cook 2-3 minutes longer, depending on heat of grill.
    14. Remove chicken; spoon lemon juice and chive mixture over and serve.

    Lisa's Notes
    1. Do not use salt.
    2. Do not use oil, just rub with minced garlic.
    3. Would be good served either with rice or roasted potatoes.
    4. Should be able to make this on George Foreman Grills.
