    Chicken: Raspberry Jalapeno Chicken

    2 chicken breast (free of those extra tidbits of fat)
    2 Tbsp. Raspberry Jalapeno sauce (see below)
    1 bell pepper

    Cut chicken strips into fajita strips and add sauce and pepper. Serve over rice.

    I usually have grilled chicken breasts of various flavors and some plain in the freezer. Sometimes I go ahead and cut some into strips or cubes before freezing then I can just take out a baggie and make whatever I want. So I take a bag of plain strips, put in frying pan with just a little water and heat until warmed and add sauce and peppers. My peppers are a variety of bell and hot peppers that were cut into strips and bagged with several pieces of different colors and some hot ones added.


    Raspberry Jalapeno Sauce
    1 pint fresh raspberries
    1 jalapeno pepper - seeded & finey chopped
    1/2 lemon - juiced
    1/3 cup "sugar" (substitute Splenda here)
    3 Tbsp fresh mint - chopped

    In small saucepan over low heat, combine berries, jalapeno, lemon juice, and "sugar". Gently stir just until heated through and berries begin to fall apart. Remove from heat, stir in the mint. Yield 1 cup.
