    Chicken: Sauteed Garlic Chicken

    List of Ingredients




    2 Boneless, Skinnless, Chicken Breasts, Cubed
    1/4 C Minced Onion
    2 TBSP Minced Garlic (or as much as you want--I use equal onion and garlic)
    1 TBSP Finely Chopped Chives
    1 TBSP Finely Chopped Parsley

    Recipe



    Mix chicken and 1/2 of all other ingredients in a bowl and cover and chill for at least 30 minutes. When satisfied that the chicken has marinated long enough or when you can no longer wait, sweat the remaining onion and garlic in a good non-stick sautee pan until tender. Add chicken mixture and cook on med-hi making sure to let every side get 'colored' by the caramelizing onions and garlic. If chicken sticks, add 1 tablespoon of sodium-free stock at a time. Cook till done and serve immediately. The absence of fat and salt aren't missed...this dish goes really well with garlic mashed potatoes and a heaping helping of steamed broccoli!
