    Chicken: Spicy Chicken w/ Rice

    List of Ingredients




    * 3 oz chicken, cubed (will be about 2 oz after cooking)
    * 1/4 tomato
    * 1/4 tsp oregano
    * 1/2 tsp curry powder
    * 1/4 green chile
    * 1/4 tsp red chile
    * 1/2 tsp black pepper
    * cilantro leaves
    * 1 tbsp diced onions
    * pinch of garlic
    * cooked rice

    Recipe



    Heat a nonstick pan. Cut raw chicken breasts into cubes and put into pan with about 1/4 cup of water, onions, a pinch of garlic and black pepper. Cover pan and let cook for about 5 minutes. Add tomato, chiles, curry powder and oregano. Continue to cook adding water while cooking to make a gravy . When chicken is done, mash tomatoes and mix well making a gravy. Add cilantro, cover pan for cook for 5 to 10 minutes longer. Serve with rice.
