    1 lb. Turkey Breast Mince
    1 can rio-tel tomatoes
    1 large fresh tomato (vine ripened and very red if possible)
    1 onion
    2 cloves of fresh garlic (run through the garlic press)
    2 tblspoons fresh cilantro
    1/4 jar minced jalapenos (about 1/8 of a cup?)
    no sodium tomato paste (or sauce if you can't find paste)
    1 cup or can of no salt black beans
    chilli powder
    cumin
    black pepper
    5-6 shakes of REGULAR tobasco sauce

    In a large skillet, brown turkey breast mince over med. high heat, then add 1/2 the onion (finely minced), tons of chilli powder, cumin, black pepper and the tobasco and 1 of the garlic cloves to the meat and let simmer for approx. 10 minutes. Add the whole jar of tomato paste or sauce and stir well while heating.

    Once that is heated, add the can of chopped rio-tel tomatoes (if these aren't on plan, add plain no salted canned tomatoes, DO NOT DRAIN THE LIQUID FROM THE CAN), stir in the skillet. Add the rest of the chopped onion, the fresh tomato and more chilli powder and cumin and black pepper. Stir then add the cilantro, jalapenos and other clove of garlic. Stir again, then add the black beans.

    Let simmer on a low heat for about 1- 1 1/2 hours, stirring every five minutes or so. If the mix is too dry, add more tomato sauce and 1/2 of that amount of water. Add more chilli powder and cumin and black pepper to taste. Consistency should be fairly thick but not soupy. If you prefer really hot chilli, add more jalapenos. The black beans are also optional.
