    Turkey: Curried Turkey Chops & Mushrooms

    List of Ingredients




    Vegetable broth
    1 lb turkey breast chops or turkey breast tenderloin, if you prefer
    1 cup sliced mushrooms
    1 onion, chopped
    1 cup no sodium beef, chicken or homemade vegetable broth
    1 tbs curry, or to taste
    1/4 tsp ground cinnamon
    black pepper to taste

    Recipe



    1. Heat vegetable broth in heavy skillet then add turkey chops. Cook turkey about 3 minutes on each side. Add more broth as needed while cooking to prevent sticking. Remove turkey from skillet.
    2. Add mushroom and onion to skillet; cook about 5 minutes.
    3. Stir in broth, curry, cinnamon, and pepper, scraping up any browned bits stuck to skillet. Bring to a boil, reduce heat to medium low. Add chops to skillet, spoon sauce and mushrooms over them. Simmer about 10 mins.
