    Turkey: Diamond Head Turkey w/ Pineapple

    12 ounces turkey cutlets
    1/2 cup pineapple juice
    1/2 cup minced onions
    3 tablespoons apple cider vinegar
    2 tablespoons low sodium soy sauce (off plan ingred)
    1 tablespoon peeled minced gingerroot
    3 cloves garlic, minced
    1 ripe pineapple
    1 tablespoon cornstarch (off plan ingred.)
    1 green bell pepper, cut into thin strips
    1 sweet red pepper, cut into thin strips

    Cut the turkey into bite-size pieces. In a large bowl, combine the pineapplejuice, onions, vinegar, soy sauce, ginger and garlic. Add the turkey. Cover and refrigerate for 4 hours.
    Peel, core and slice the pineapple into 1/2" cubes. Drain the turkey and onions, reserving the marinade. Heat a large nonstick frying pan over medium-high heat. Add 3 tbl. of the marinade and heat for 1 minute. Add the turkey and onions, Stirfry just until brown. Remove form the pan and keep warm. Dissolve the cornstarch in the remaining marinade. Add to the pan. Cook, stirring constantly, until thick. Add the peppers, pineapple and turkey mixture. Toss to coat with sauce and reheat turkey.
