    Turkey: Don's Turkey Meatballs

    List of Ingredients

    1 lb ground turkey breast
    1/2 onion, chopped
    2 cloves garlic, pressed
    oregano, basil and crushed red pepper to your taste

    Recipe

    Mix all together well in a bowl, then form into small meatballs, @1 inch in diameter.

    Place in non-stick skillet. Pour sodium free, fat free chicken broth to barely cover bottom of skillet. Fry on medium heat.

    My trick for darkening the unappetizing white looking meatballs. Allow the broth to cook away and allow the juices to just barely burn in the botton of the skillet, then pour in another small amount of the broth. It will boil and turn very dark, roll all the meatballs in this liquid and watch them get brown and tasty looking.

    These are especially good with the spaghetti sauce on the recipe site.

    Since they are small you get the feeling of a lot of food. For me it usually takes 8 meatballs to equal 4 oz for my protein.
