    Turkey: Modified Italian Meatloaf

    1 can no salt added tomato paste
    1/2 cup red wine,
    1/2 cup water
    1 tsp minced garlic
    fresh basil
    fresh oregano
    fresh thyme
    Hot sauce to taste
    1/2 tsp splenda
    24 ounces ground turkey
    1/2 cup uncooked oatmeal
    1/2 cup shredded zucchini
    2 egg whites

    Preheat oven to 350°. Combine tomato paste, wine, water, garlic, basil, thyme, oregano, hot sauce and splenda in a small saucepan. Bring to a boil; reduce heat to low. Simmer, uncovered, 15 minutes. Set aside.

    Combine turkey, oats, zucchini, egg whites and 1/2 cup reserved tomato mixture in a large bowl. Mix well. Shape into a loaf; place into ungreased 9x5x3" loaf pan. Bake 45 minutes. Discard any drippings. Pour remaining 1/2 cup tomato mixture over top of loaf. Bake an additional 15 minutes. Place on serving platter. Cool 10 minutes before slicing.

    I add some of the fresh herbs to the meat and let it sit while I am making the sauce. You could even do it a day or two beforehand to increase the flavor. I use fresh herbs, but dried ones work just as well. I also prefer to add about 3/4 of the tomato mixture into the meat and put a little on top of the loaf at the beginning of cooking. I then add more before the last 15 min of cooking.
