    Salad: Chicken & Rice Salad w/ Fruit

    List of Ingredients

    2 c. chicken broth
    3/4 c. uncooked long grain rice
    1/2 tsp. curry powder
    2 dashes hot sauce
    1/2 c. sliced celery
    1/4 c. sliced green onion
    2 tbs. finely chopped ginger
    2 tbls. snipped fresh cilantro
    1 1/2 pound skinless chicken breast, cut into strips
    1/8 tsp. pepper (or to taste)
    2 c. fresh spinach leaves
    1 c. sliced fresh peach or nectarines
    1 recipe poppy seed dressing (see below)

    POPPY SEED DRESSING -
    1/3 c. orange juice
    1 tbs. mustard
    1 tsp. poppy seed
    2 to 3 dashes hot sauce

    Recipe

    1. In medium saucepan combine broth, rice, curry powder, hot sauce. Bring to a boil; reduce heat. Cover and simmer about 15 minutes or until tender. Remove from heat. Stir in celery, green onions, ginger, and cilantro. Cover and let stand for about 5 minutes.
    2. Season chicken with pepper. In a large skillet over medium heat cook chicken , half at a time, until no longer pink. Remove from skillet.
    3. To serve, line plate with spinach leaf. Place rice mixture on top of spinach. Arrange chicken and peach (or nectarine) slices on top of rice. Drizzle with poppy seed dressing.
