    List of Ingredients




    1 large yellow onion
    1 cup water
    1 tablespoon arrowroot
    2 tablespoons rice wine vinegar

    Recipe



    1. Cut the onion in half with the skin and ends attached. Lay the halves on a plate, face down and microwave for 15 minutes. Peel and cut the ends off, place the cooked white part into a blender and whiz until completely smooth.

    2. Push the onion puree through a sieve into a bowl or measuring jug. Combine the onion puree with the water, arrowroot and vinegar. Heat to thicken and clear. Cool and use as a base for salad dressings. Store in the refrigerator for up to a week.
