    Salad: Carrot & Mint Salad

    List of Ingredients

    1 1/2 tablespoons minced red onions
    1 tablespoon apple cider vinegar
    3 tablespoons water, divided
    1 1/2 tablespoons minced fresh mint
    (1/4 teaspoon kosher salt )
    1 teaspoon lemon juice
    4 carrots, grated on largest hole
    (1 teaspoon olive oil )

    Recipe

    Combine the onions, vinegar, 1 tbl. of the water, mint, salt and lemon juice, blending well. Saute the carrots in the oil and remaining water until they just start to soften. Toss the dressing in with the hot carrots.

    buny's note: may wish to omit salt, and saute in broth or use cooking spray rather than oil to make plan friendly
