    Salad: Tomato Cucumber Salad

    Recipe Introduction

    "Okay, so here is one of my favorites - it tastes like summer in my mouth. Okay, I also make it very garlicky, but I like hot. This is both hot and refreshing and cool at the same time! I also like it because I make one batch at the beginning of the week, and then it is packaged and lasts for the week."

    List of Ingredients

    2-3 cucumbers
    3-4 tomatoes
    3/4 c cider vinegar
    1/4 c rice vinegar
    1 red onion (yellow onion works as well)
    2-3 T garlic powder
    2-3 green onions
    1-2 T fresh ground pepper
    1-2 Leaves of fresh Basil
    3-4 cloves garlic

    Recipe

    Dice cucmber and tomato - in largish chunks and place in large bowl. Slice onion in thin rings and then half them so that they are semi-circles. Slice green onions in thin slices. Add all onion in. Pour in vinegars, pepper, and garlic powder. Mince garlic, chiffonade Basil and add both in. Stir it all together. It is even better after marinating all night. Make sure that your vinegars have no sodium - you must read labels. Otherwise, I package into portioned containers and store in the fridge until ready.
