    Salad: Shredded Carrot Salad

    List of Ingredients




    6 large carrots, shredded
    2 scallions, chopped
    2 tablespoons splenda
    1/2 teaspoon ground cumin
    1 pinch cayenne pepper
    1/4 teaspoon black pepper
    3 tablespoons lemon juice
    1/2 cup fresh minced parsley

    Recipe



    Toss carrots with the scallions. Combine the splenda, cumin, cayenne, pepper and lemon juice. toss the carrot-scallion mixture with spices. Let stand for 1 hour. Sprinkle with parsley before serving.
