    Salad: Ceviche Salad

    From member Makeover Specialist: You can also try a combination of shrimp, scallops and/or squid in this recipe

    List of Ingredients

    * 1 lb Sea Bass fillet, cut into 1/2 inch cubes
    * 3 limes or 2 lemons, squeezed and seeds removed from juice
    * 1 med red onion, sliced thin
    * 4 ripe tomatoes, diced
    * 1 med green or red bell pepper
    * 2-4 Serrano chiles (depending on how hot you like it)
    * 4 tbsp chopped fresh cilantro
    * 1/2 tsp black pepper

    Recipe

    Put fish into a ceramic bowl and pour lime juice over fish. Add sliced onion, tomato, bell pepper, chiles, cilantro and pepper. Cover and let marinate in the refrigerator for 2 hours or longer. You can add cumin, coriander, red pepper flakes to taste.
