    Salad: Sweet & Sour Tuna Rice Salad

    List of Ingredients

    3 tbl red wine vinegar
    2 tsp granulated sugar or splenda
    (original recipe calls for 1/4 tsp salt)
    1/4 tsp pepper
    8 oz tuna, cooked (water packed if using canned -- reserve liquid)
    2 cup long-grain rice cooked (white or brown)
    2 cup tomatoes peeled and chopped (fresh)
    1 cup red onion chopped
    1 cup celery finely diced
    1/2 cup scallion chopped
    1/2 cup frozen peas thawed (or use blanched cut up snow peas)

    Recipe

    * In a small bowl, combine vinegar, sugar/splenda, pepper and 1 tablespoon of reserved tuna liquid.

    * In a large bowl combine remaining ingredients; add vinegar mixture and toss. Let stand for 10 minutes; toss again and serve.
