    Baked Fish in Vinegar Sauce

    Adjusted to fit plan from "The Frugal Gourmet"

    List of Ingredients




    2 to 3 pounds whitefish fillets
    oat flour
    2 large yellow onions, peeled and sliced thin
    ½ cup white wine vinegar
    2 cloves garlic crushed
    1 teaspoon oregano
    2 teaspoons dry mustard
    Handful of chopped parsley
    ½ teaspoon ground criander
    1 tablespoon lemon juice
    1/4 cup dry white wine

    Recipe



    Dredge the fish fillets in oat flour. Place them in a shallow baking dish so that they all fit snugly. Saute' the onions, until they are tender and transparent. Spread the onions over the fish fillets. Blend the wine vinegar, garlic, oregano, mustard, parsley, coriander, lemon juice, and wine. Pour over the fish and bake uncovered, in a 350 degree oven for about 45 minutes.

    Serves 5 to 8
