    Cajun Spiced Fish

    2 T chicken broth
    1 t dried basil
    1 t dried thyme
    1 t paprika
    1 t black pepper
    1 t ground red pepper
    1/8 t garlic powder
    4 4ozs. fish fillets of your choice. The recipe calls for catfish, but it doesn't matter.

    Combine all ingredients in small bowl.

    Place fish on broiler pan coated with cooking spray or tin foil. Brush fish with mixture. The more mixture you add the spicer it will be (caution). Broil 5 1/2 inches from heat (with electric oven door partially opened) 7 minutes or until fish flakes easily when tested.
    Yield: 8 2oz servings
