    Dijon Shrimp

    gm2lose, from Bay Shrimp bag

    List of Ingredients




    12 oz Cooked tail-on Shrimp
    1 ½ C Sliced fresh mushrooms
    1/4 C Finely chopped onion
    1 T Rice Flour
    3/4 C Chicken broth
    1/4 C Dry white wine
    1T Dijon mustard (I use mustard powder)
    1t Crushed dried tarragon
    1/4 t Paprika
    1/4 t Pepper

    Garnish: Fresh herbs, lemon twist (optional)

    Recipe



    Spray large skillet with Pam. Saute' mushrooms and onion until limp. Stir in rice flour until mixed; add chicken broth and wine, stirring. Sir in mustard and seasons. Cook until mixture thickens and bubbles. Reduce heat and stir in shrimp. Cover and cook 2 minutes more or until heated through. Serve over rice.


    This can also be made with Scallops

    If you want to make Fish Stew, add any other fish that you happen to have, and increase the spices to taste.
