    Dill-Poached Fish

    List of Ingredients




    1 1/3 pounds fish fillets
    1/4 teaspoon kosher salt (may wish to omit)
    1/8 teaspoon fresh ground pepper
    1/2 cup white wine
    1/4 cup lemon juice
    4 inch sprig fresh dill
    1 shallot, peeled, crushed
    1/2 teaspoon minced fresh dill for garnish

    Recipe



    Rub the fish with the (salt and) pepper. Combine the wine and lemon juice. Pour enough in a pan so that it will cover 2/3 of the fish. If you have some liquid left over, save it for another dinner.

    Put the dill sprig and the shallot in the poaching liquid. Bring the liquid to a simmer and let6 it cook, covered, for 5 minutes before adding the fish. this will infuse the cooking liquid with the herb and shallot flavors.

    Before adding he fish, make sure the liquid is simmering gently. Place the fish on top of the dill. Cover the pan and simmer gently until the fish is done. Remove to serving plates and garnish with fresh minced dill.
