    Fish Baked With Mint

    List of Ingredients




    1/2 cup fresh mint leaves
    1/2 red onion, peeled and sliced into rounds
    2 cloves garlic, minced
    1 1/3 pounds thick fish fillets or steaks
    dash fresh ground black pepper
    dash crushed red pepper flake (optional)
    1 tablespoon balsamic vinegar
    2 tablespoons lemon juice
    3 tablespoons white wine
    1 tablespoon drained (and well rinsed) capers

    Recipe



    Preheat the oven to 425 degrees. Line the bottom of a baking dish with the mint leaves. Place the onion rounds on top of the mint. Scatter the garlic on top. Rinse the fish in water, then pat dry with a towel. Rub on the pepper and pepper flakes. Place the fish in the baking dish.
    Combine the vinegar, lemon juice, wine and capers. Pour the mixture over the fish. Bake for 10-20 minutes, depending on the thickness of the fish and type of baking dish used.
