    Friendly Tuna Patties

    List of Ingredients




    1 Can Low-Sodium Tuna*
    1 Celery Stalk
    1/2 Onion small
    2 Tbs. Ground Flaxseed
    1 tsp. Lime Juice
    1 Tbs. Fresh Cilantro (or 1 tsp. dry coriander flakes)
    1 Egg
    1/2 tsp. Cumin (if desired)
    1 Dash Cayenne (to taste)

    Recipe



    Drain and flake tuna into a small mixing bowl. Chop the Celery, onion, and cilantro. Mix all ingredients and shape into patties. Heat non-stick skillet over med-low heat and cook patties for 3-4 minutes on each side, until golden brown.

    *StarKist makes both light and white chunk low-sodium tuna. My HFS carries a no-salt brand, Deep Sea (imported by Satini Foods).

    *Vary the mix-ins to your liking or supply. Sometimes I replace the celery with red bell pepper.
