    Gingerly Grilled Salmon

    List of Ingredients




    4 tablespoons no salt vegetable broth
    1 bay leaf, finely chopped
    5 cloves garlic, minced
    4 5 oz salmon fillets
    1 tablespoon apple cider vinegar
    1/8 teaspoon ground ginger
    1 tomato, chopped
    1/2 red onion, sliced

    Recipe



    Place 2 tbl. of the broth plus the bay leaf and garlic in a small bowl. In a glass baking dish, coat fish with herb mixture and arrage coated fish in a single layer in the dish. Cover and refrigerate for at least 2 hours or overnight. Whisk remaining broth, vinegar and ginger in a medium bowl. Add tomato and red onion. Set aside. Preheat broiler. Grill or broil salmon for about 9 minutes or untils almon is opaque in the center. Transfer to serving plates and top with tomato and onion.
