    "Be sure to select a firm-textured fish, such as halibut, swordfish, or salmon. The fish's firmness will make the steaks easier to turn on the grill."

    List of Ingredients




    6 small or 3 medium fresh or frozen firm fish steaks
    1/2 cup dry white wine
    6 tablespoon snipped fresh cilantro
    2 tablespoon lime or lemon juice
    1 tablespoon olive oil (for marinade)
    1-1/2 teaspoon chili powder
    1 teaspoon pepper
    1 teaspoon dry mustard
    (original recipe called for 1/2 teaspoon salt)
    lime wedges

    Thaw fish, if frozen. Rinse fish, pat dry with paper towels. Place fish in a shallow baking dish. For marinade, mix wine, 1/4 cup of the cilantro, the lime juice, oil, chili powder, pepper, mustard, (and salt). Pour over fish. Marinate in the refrigerator for 2 hours, turning the fish occasionally.

    Remove fish from the marinade. Spoon some of the marinade over the fish. Discard any remaining marinade. Lightly brush grill rack with oil (or cooking spray). Grill fish on rack of uncovered grill directly over medium coals for 8 to 12 minutes or just until fish flakes easily when tested with a fork, turning once. Serve with lime wedges and sprinkle with remaining cilantro.
