    Poached Fish with Herbs 2

    List of Ingredients




    2/3 pound white-fleshed fish fillets
    1/8 teaspoon black pepper
    1/4 cup white wine
    2 tablespoons lemon juice
    1 tablespoon minced fresh chives
    2 inch sprig of fresh tarragon

    Recipe



    Rub the fish with the pepper. Combine the wine and lemon juice. Pour enough in the pan so it will reach halfway up the fish. the amount of liquid required is determined by the size of the pan and the thickness of the fish. If your pan is large, you may need more liquid.

    Bring the wine and lemon juice to a simmer. Add the fish, top with the chives,a nd put the tarragon to one side in the poaching liquid. Cover the pan and simmer very gently (a few slowly rising bubbles) until the fish is done.
