    Roasted Red Snapper Salad

    4 Ê (5-oz.) red snapper fillets
    2 Ê lemons
    1 Êtablespoon olive oil
    1 Êtablespoon Dijon mustard
    1 Êtablespoon red wine vinegar
    1/2 Êteaspoon dried thyme
    4 Êcups mixed salad greens
    1 Ê tomato, chopped

    Heat oven to 500¡F. Spray a roasting pan with vegetable cooking spray; set aside. Season fillets to taste with ground black pepper. Sprinkle with the juice of one lemon. Place in roasting pan and roast until fish flakes when tested with a fork, about 7 minutes. Sprinkle with juice of remaining lemon.

    Meanwhile, in a large bowl combine olive oil, mustard, vinegar and thyme. Whisk well. Season to taste with ground black pepper. Add greens and tomatoes, tossing to coat with dressing. Divide greens among individual plates. Top with a warm piece of snapper. Serve immediately.
