    Shrimp & Cucumber Salad

    List of Ingredients

    12 ounces cooked shrimp
    1 cup peeled and sliced cucumber
    3 tablespoons rice vinegar
    3 tablespoons lite teriyaki sauce
    1/4 teaspoon ground ginger
    12 lettuce leaves
    1/2 cup green onions (greens only), thin sliced

    Recipe

    In a small bowl, combine all but lettuce and green onions. Cover with plastic wrap and refrigerate for 1 hour. To serve, line salad bowls with 2 letuce leaves. Toss shrimp mixture, and using a slotted spoon, split mixture among bowls. Sprinkle each serving with 2 tbl. green onions. Makes 6 portions of 2 oz. protein B.
