    Cold Fish Salad

    List of Ingredients

    * 2 tbsp no-salt added broth of your choice
    * juice of 3-4 limes
    * 1 lb Orange Roughy fillets
    * 1/2 cup chopped onion
    * 1/4 cup chopped fresh jalapenos (optional)
    * 3/4 cup chopped tomatoes
    * 1/4 cup chopped fresh parsley
    * 2 cups cooked mustard greens

    Recipe

    Heat broth in a non-stick skillet. Place fish in skillet and pour lime juice over it, cook until fish is opaque. Add onion, jalapenos, tomatoes, and parsley, cook for 5 minutes. Transfer to serving dish and refrigerate for at least 2 hours until chilled. Serve on mustard greens.
