    Halibut with Tomato-Lemon-Caper Coulis

    12 ounces boneless halibut steaks
    1/4 teaspoon freshly ground pepper
    6 cloves garlic, minced
    8 large plum tomatoes, seeded and diced
    1 large lemon, peeled and sectioned
    2 tablespoons minced fresh basil
    1 tablespoon rinsed, drained capers
    1 teaspoon balsamic vinegar

    Recipe

    Preheat oven to 400¼F. Sprinkle halibut steak with pepper. Arrange fish in a shallow baking pan, just large enough to hold fish in a single layer; bake for 10-12 minutes, or until fish flakes easily when tested with a fork.

    Meanwhile, spray a medium nonstick skillet with cooking spray and heat. Add garlic, Cook over medium-high heat, stirring constantly, until tender. Add tomatoes, lemon, basil and capers; cook, stirring frequently, 3 minutes (until tomatoes are softened). Stir in vinegar. Remove from heat and keep warm.

    Divide fish evenly into 6 servings and top each with 1/4 cup reserved coulis. Each serving equals a 2 oz. Protein A portion.
