    Japanese Rice Balls with Fish

    From member rebekb: Do something exotic with your tuna or salmon and rice! This recipe has been modified from the original to remove the salt. It is designed to match 2 oz protein with 1/2 cup carb. Eat cold or warm. These are great for lunch!

    List of Ingredients

    * 2 cups cooked Japanese or other sticky rice
    * 1-2 tsp white or roasted sesame seeds**
    * 8 oz tuna or salmon (fillets or canned)
    * 1 sheet of nori (optional - dry "seaweed" paper used in making sushi)
    * lite soy sauce, grated ginger, pepper, etc to taste

    Recipe

    Cook rice. Let cool until just warm. Grill or pan fry fish until just done (unless canned). Flake with a fork into small pieces. Add soy sauce, ginger, pepper, etc to taste. Put warm rice in a bowl with tuna mixture and sesame seeds**. Mix well with hands. Use a 1/4 cup measure to make 8 rice balls or a 1/2 cup measure to make 4 rice balls. Wet hands and shape rice mixture into balls or triangles. If you use nori, cut into 4 or 8 strips and wrap each ball with one strip. Wrap each ball with plastic wrap and keep refrigerated.
