    Shrimp Provencal

    List of Ingredients

    2 tablespoons shallots, chopped
    1 clove garlic, crushed
    1/2 whole tomato, peeled, coarse chopped
    1/4 cup low sodium tomato sauce
    1/8 teaspoon cayenne pepper
    1 pound shell-on shrimp
    2 tablespoons dry white wine
    1 tablespoon fresh parsley, chopped

    Recipe

    Shell, devein and boil shrimp for 5 minutes or just until they turn pink. In a large skillet that has been sprayed with cookign spray, over medium heat, saute the shallots and garlic for 2 minutes. Add the tomato, tomato sauce, cayenne and pepper to taste.

    Bring to a boil, stirring occasionally. Reduce heat to low and let simmer, uncovered, for 10 minutes. Stir in shrimp and wine. Cook 5 minutes more. Remove from heat and transfer to a serving platter. Sprinkle with parsley before serving. Makes 6 portions of 2 oz. Protein B
