    List of Ingredients




    1 cup fresh mint leaves, chopped
    1/4 large onion
    Cold water
    Juice of one lime
    Two packets of Splenda
    Ground Red Pepper
    Thai Spice ( or Chili pepper, Garlic, Red Pepper, Jalepeno Pepper, Lemon Peel)
    A Package of Rice Noodles
    8 oz cooked shrimp or chicken

    In a blender, coarsely puree the mint, onion, 5 tablespoons of cold water, lime juice, Splenda, and ground red pepper. Set aside.

    Soak rice noodles in hot water for five minutes until softened, but not soggy. Pan fry in a nonstick wok (or frying pan). Add Thai spice and cooked meat. Pan fry for three to five minutes. Then add the puree. Stir fry for a few minutes (not too long, or the shrimp will go rubbery).
    Servings: 4 (Type A)
