    Tilapia filets (I used 4)
    spinach (baby is best if not trim stems off)
    Fresh Basil
    Fresh or dried oregano
    fresh or dried parsley
    minced garlic ( I used 2 cloves)
    gingerroot about 3 tablespoons grated
    cooked riced (was leftover)
    mushrooms sliced
    mock soy sauce (see condiment recipe on boards or low sodium variety)
    white wine
    1/2 lemon
    diced tomatoes ( I used a can 15.5 oz) low sodium or fresh (for four filets I'd use 3 good sized ones)

    First make a marinade of about 1/2 c of soy sauce, 1/2 to 1 cup white wine, about 2-3 tablespoons grated fresh gingerroot, and squeeze half a lemon in it. Mix well. Dump into a ziploc bag, toss the fish in and let marinate for at least 20 minutes. (if it doesn't seem to cover just add a little water)

    In the meantime mince 2 cloves of garlic, grate another tablespoon of gingerroot, add about 7 chopped basil leaves, 1 tblsp dried oregano, 1 tblsp dried parsley or double fresh with either of these. Mix with diced tomatoes (if using canned drain and rinse) . Set aside

    Get a large glass baking dish, line with non stick aluminum foil (have it kindof make a boat sides up a little), lay a handfull of spinach in the bottom for a portion. Spoon cooked rice onto that. Get your marinated filets and lay one on top rice and spinach. Next layer on some sliced mushrooms. Add tomato mixture ontop of that.

    If you are worried about it drying out (spoon a little of the marinade (not much) onto of this. It doesn't need it.

    Bake in a 350 oven for 30 minutes. Everything you need in one dish. The aluminum foil makes cleanup a snap and voila.
