    Asian Style Chicken Noodle Soup

    2 cup rice noodles noodles
    6 c. no/low sodium chicken broth
    8 oz. chunked, chicken alreday cooked
    2 c fresh mushrooms, sliced
    2 teaspoons grated fresh ginger
    4 teaspoons no/low sodium soy sauce
    1/4 cup sliced green onions
    Pinch or to taste dried red chili peppers

    Cook noodles according to package directions; drain and set aside. Meanwhile, in 2-quart saucepan over high heat, bring broth to boil. Reduce heat to medium-low. Mix in chicken, mushrooms, ginger, pepper flakes and soy sauce. Simmer 3 minutes.
    Mix in noodles & onions. Return to simmering to heat through. Ladle into soup bowls.
