    Portugese Potato-Kale Soup

    List of Ingredients




    2 tablespoons low sodium chicken broth
    1 medium onion, chopped
    3 cloves garlic, crushed
    6 cups water
    3 cups diced white potatoes
    1/2 teaspoon ground black pepper
    3 cups chopped fresh kale
    1/4 cup fresh parsley, chopped

    Recipe



    (original recipe calls for 1 c. low salt canned great northern beans, rinsed and drained). Heat the broth in a large saucepan. Add the onion and garlic, and saute until the onion just begins to soften, about 3 minutes. Add water, potatoes and black pepper. Bring to a boil, reduce heat and simmer for 20 minutes. Stir in the kale and simmer for another 10 minutes. Add the (beans and the) parsley and heat before serving.
