    Ginger Carrot Soup

    List of Ingredients

    1 T fresh ginger, minced
    2 cloves garlic, minced
    ½ C onion, chopped
    2 T butter( use broth instead)
    2 10 ¾ oz. cans chicken broth or vegetable broth, strained
    1 soup can water
    4 C carrots, peeled and sliced
    1 C yams or pumpkin, peeled and cut into 1 inch pieces
    3-4 whole star anise
    dash cayenne
    ½ tsp sugar (Splenda)
    ¼ tsp candied ginger, chopped (optional)
    ¼ tsp orange peel grated (optional)
    ¼ C fresh lime juice (approximate)

    Recipe

    1. In a soup pot or large casserole, sauté the ginger, garlic and onion in butter until tender.

    2. Add the broth, water, carrots, yams, anise, cayenne, splenda (and optional candied ginger, orange peel), and simmer until tender, about 20 minutes. Add the lime juice, remove star anise, and puree soup in a blender or food processor until smooth. Reheat if needed.

    This is a great winter soup easy to make with lots of flavors and spices.
