    Veggie Soup d'Jour

    List of Ingredients

    1 large bunch of Celery(chopped/fine or in slices)
    2 large green peppers(chopped)
    2 Large red/yellow peppers(chopped)
    2 large onions(chopped)
    1 container of fresh mushroom(optional)
    1 can or two cups chicken broth( I use my own)
    1 crushed Chipotle Pepper(careful these are very hot)
    2 cans of roman tomatoes without salt
    1Tbsp Basil, Thyme, Cumin, Oregano, Parsley, Pepper(white or mixed, garlic(minced) If you like you can use an (3T)Italian
    blend then omit all but the pepper and Cumin.

    Add any other free veggies you like.

    Okay here we go in a large dutch ove(5qt pan) combine all the ingrediants in the pan cover the mix with just enough water to be about 1 inch above the mix or fuller your option. Mix and stir ingrediants cover cook on high until it boils then reduce heat to med/low let cook an hour.

    Once it is done I take it and transfer half to my blender. Then puree it. Do not pour whole contents in. Half the blender will be full once pure`ed.

    You can opt to leave as it is but, I puree mine and I can store it in containers. Keeps in fringe 1 week freezer 6 months. This soup is so full of flavor you will love it. Better then V-8 because you made it your self. This soup can be served cold(or) hot I like it both ways.
