    Zucchini Soup with White Wine

    2 1/4 cups low salt chicken broth
    1 medium onion, chopped
    1/4 cup white wine
    4 cups diced zucchini
    1/4 teaspoon ground black pepper
    2 cloves garlic, minced
    1/4 cup coarse chopped fresh parsley

    Recipe



    Heat 1/4 cup broth in a large saucepan. Add onion and saute until tender, about 3 minutes. Add remaining broth, wine, zucchini, black pepper and garlic. Bring to a boil, reduce heat, and simmer until zucchini is tender, about 12 minutes. Remove from heat and allow to cool for 10 minutes. Place the mixture in a blender or food processor and blend until smooth. Return the soup to the saucepan, stir in the parsley, and heat through.
