    List of Ingredients




    2 large onions, chopped
    1/4 cup finely chopped yellow peppers
    1/2 teaspoon minced garlic
    2 tablespoons chopped raisins (off plan ingredient)
    2 tablespoons sugar (or splenda?)
    2 teaspoons brewed coffee
    3/4 cup white wine
    1 teaspoon dried thyme
    1/2 teaspoon dried rosemary, crumbled
    ground black pepper

    Coat a large nonstick saucepan with nonstick spray. Add the onions, peppers, and garlic. Mist with nonstick spray. Coer and cook over medium heat, stirring occasionally, for 4-5 minutes, or until the onions start to release moisturel. Uncover and reduce the heat to medium low. Cook, stirring occasionally, for 5-6 minutes, or until golden. If needed, add 1-2 tsp water to prevent sticking.
    Add the raisins, sugar and coffee. Cook over low heat for 2 minutes, or until the sugar dissolves. Add the wine. Cook over medium heat, stirring occasionally, for 5 minutes, or until the liquid has nearly evaporated. Add the thyme and rosemary. Cook overlow heat for 5 minutes. Season to taste with the pepper.

    Note: best if you let it refrigerate a few days after cooking. Good with cooked poultry, beef, beans or grilled veggies. Good with sweet onion varieties, like Maui, Vidalia and Walla Walla.
