    Dilled Squash with Mushrooms

    List of Ingredients




    1 pound crookneck squash, cut in thin diagonals
    4 ounces button mushrooms, sliced
    1 large onion, sliced
    1 orange or yellow pepper, sliced
    1/4 cup chopped fresh dill
    2 tablespoons chopped fresh chives
    1 large clove garlic, minced
    1/4 teaspoon ground black pepper
    1/2 cup fat free parmesan (optional)

    Preheat the oven to 350ºF. coat a 12x8" baking dish with nonstick spray (or use nonstick foil). In a large bowl, combine the squash, mushrooms, onions, sliced peppers, dill, chives, garlic, black pepper. Toass to mix. Spread evenly in the prepared dish. (sprinkle with parmesan if using). Cover with foil. Bake for 25 minutes or until squash is tender.
