    1/2 cup rice wine vinegar
    2 tablespoons brown sugar (for marinade)
    1 tablespoon grated fresh gingerroot
    2 medium cucumbers, sliced diagonally
    3 medium carrots, sliced diagonally
    1 medium onion, thinly sliced

    Recipe



    Whisk together the vinegar, brown sugar and gingerroot. Combine the veggies. Pour the dressing over the veggies and toss well. Cover and refrigerate for 12 hours before serving.
