    Japanese Rice Noodles w/ Spinach Ribbons

    2 1/2 ounces thin rice-stick noodles
    1 1/2 cups defatted low salt chicken stock
    1 1/2 teaspoons dried sage
    1 teaspoon low sodium soy sauce (off plan ingredient)
    3 cloves minced garlic
    3 cups shredded spinach leaves
    1 cup minced scallions

    In a large pot of boiling water, cookt he noodles ofr 4 minutes. Drain and set aside. In a large nonstick frying pan, combine the stock, sage, soy sauce and garlic. Bring the mixture to a simmer. Add the noodles. Do not stir or the noodles will tangle; instead, gently move them around using chopsticks or tongs. When the noodles are heated, add the spinach and scallions. Simmer for 20 seconds, or until the spinach is wilted. Serve in shallow bowls.
