    Belgian Mashed Vegetables & Potatoes

    Recipe Introduction

    From member starfish: Serve this refreshing change of pace side dish as you would plain mashed potatoes.

    List of Ingredients

    * 2 cups chopped cabbage
    * 2 med carrots, peeled and sliced
    * 4 medium potatoes, peeled and large diced
    * 1/2 cup or more low-sodium, fat-free chicken or vegetable broth
    * black pepper to taste

    Recipe

    Add the cabbage and carrots to a large pot. Cover with water, bring to a boil, reduce heat and simmer until soft, about 20-30 minutes. Add the potatoes making sure they are covered with water. Cook until soft. Drain vegetables and transfer to a mixing bowl. Add 1/4 cup broth and start mixing on low. Add more liquid, gradually increasing speed of mixer until the vegetables are fluffy. Check seasonings, serve warm.
