    1/4 cup low salt chicken broth
    4 cloves garlic, minced
    1 tablespoon minced fresh gingerroot
    2 teaspoons ground cumin
    1 teaspoon ground coriander
    1 medium onion, sliced
    4 cups coarsely chopped potatoes
    3 cups eggplant, peeled, cut in 1" cubes
    1/2 teaspoon ground black pepper

    Recipe



    Heat broth in a large saucepan. Add garlic, gingerroot, cumin, coriander, and onion. Saute until onion just begins to soften, about 4 minutes. Add potatoes and eggplant. Reduce heat, cover and cook until potatoes and eggplant are done, about 15 minutes. Sprinkle with black pepper.
