    2 tablespoons low salt chicken broth
    4 cups sliced mushrooms
    1 medium onion, finely chopped
    2 cloves garlic, minced
    2 tablespoons lemon juice
    2 tablespoons sherry
    1/4 teaspoon ground black pepper

    Recipe



    Note: to clean mushrooms, rinse them breifly with cold water and dry thoroughly; they should never be soaked because they absorb water. Heat broth in a skillet. Add mushrooms, onion and garlic, and saute until onion begins to soften, about 5 minutes. Transfer mushroom mixture to a food processor or blender and process until mixture is finely chopped. Combine processed mushrooms, lemon juice, sherry and black pepper. Mix well and refrigerate for 2 hours before serving.
